Southern Raw Apple Spice Cake {family recipe!}

Sourthern Raw Apple Spice CakeEvery year this cake has been made on my birthday my either my mom, myself or my husband. In our family it's actually called the Lindsey Cake (yes really!) since this cake was given to my parents by a neighbor the day they returned home with me from the hospital.

Everyone that has tasted this cake {loves} it! It's so moist, and even though it has apples in it, they are not the chunky-gotta-chew kind of apple chunks. Trust me, it's the best. cake. ever.


Raw Apple Spice Cake
prep time: ~10 minutes, makes 8 slices

1 stick butter (1/2 cup), softened
1 cup sugar
1 egg
2 cups apples, peeled, chopped small and left raw (~2 large apples)
1 1/4 cup flour
1/2 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon nutmeg

1. Cream together the sugar and butter. Add the egg. Then add remaining ingredients.
2. Bake at 350°F for 25-30 minutes. Until a knife inserted, doesn't come out gooey.

Frosting
1 cup powdered sugar
1 tablespoon cream cheese, softened
-Cream these together and add on top of the cake when it's still hot. Serve! 

*Make sure your frosting is some what liquidy and can pour on. If it thicker it will pull apart the top of your cake. Microwave it for a little to get it warm or set it on top of the oven by the oven vent.


This recipe is very easy and straight forward. Beginners could give this a try no problem. The only time consuming part about the cake besides the baking, is peeling and chopping the apples!
Fresh out of the oven! Time to add the frosting!
